Chocolate Chip Meringue Cookies
Ingredients:
- 4 egg whites (make sure you leave your eggs out at room temperature for
a couple of hours to warm)
- ½ teaspoon salt
- 1 cup granulated sugar
- 2 cups (10-12 ounce package) chocolate chips
Cooking Instructions:
- Rinse your bowl and beaters with very warm to hot water and dry thoroughly.
- Beat egg whites, and salt in mixer bowl until soft peaks form. Gradually
beat in granulated sugar until stiff peaks form. Gently fold in morsels 1/3
at a time.
- Drop by level tablespoon onto parchment covered baking sheets. You may
spray the parchment with a little oil. (When I made them at home, I didn’t
use any grease, just the parchment paper and the cookies lifted off. When
I made them at the schul, I did spray the parchment paper with a little PAM
™.
- Bake in preheated 300 degree F. oven for 20 to 25 minutes or until cookies
are dry and crisp.
- Let the cookies stand for 2 minutes remove to wire racks to cool completely.
Store in airtight containers. Makes approximately 5 dozen cookies.
