Chocolate Chip Meringue Cookies

  1. Rinse your bowl and beaters with very warm to hot water and dry thoroughly.
  2. Beat egg whites, and salt in mixer bowl until soft peaks form.  Gradually beat in granulated sugar until stiff peaks form.  Gently fold in morsels 1/3 at a time.
  3. Drop by level tablespoon onto parchment covered baking sheets.  You may spray the parchment with a little oil.  (When I made them at home, I didn’t use any grease, just the parchment paper and the cookies lifted off.  When I made them at the schul, I did spray the parchment paper with a little PAM ™. 
  4. Bake in preheated 300 degree F. oven for 20 to 25 minutes or until cookies are dry and crisp.
  5. Let  the cookies stand for 2 minutes remove to wire racks to cool completely.  Store in airtight containers.  Makes approximately 5 dozen cookies.
