Vegetable Kugel Kupcakes

Adapted from a recipe by Susan Mandelbaum that is included in In the Tradition – A year of Food and Festivals

Ingredients

Cooking Instructions  

  1. Preheat oven to 375 degrees F.

  2. Grease or spray 12 muffin tins or ramekins.

  3. Heat margarine in skillet and sauté onion, carrots, and peppers until onion is translucent.

  4. In a bowl, mix eggs, salt, nutmeg, and pepper.

  5. Add sautéed vegetables and matzo meal and mix thoroughly.

  6. Spoon into muffin tins or ramekins.

  7. Bake for 35 to 40 minutes.

  8. Cool 10 to 15 minutes.

 

Makes 12 servings.
